Angola, Muamba de Galinha

Welcome to Angola! Angola is in the west central coast of Africa. Angola economy is one if the fastest growing countries due to its petroleum and mineral reserves. Life expectancy is one of the lowest. This growth is very centralized though.

This week we made a dish popular all over Central Africa but is known as the national dish of Angola, Chicken Moamba or Muamba de Galinha. Chicken Moamba is an easy stew like dish with chicken, broccolini or okra and Butternut Squash.

As I said this was a very straight forward meal I used a recipe from Imma on African eats, https://www.africanbites.com/muamba-chickenmuamba-de-galinha/#wprm-recipe-container-570529.

The only strange ingredient was palm oil. However, after looking everywhere including Trader Joes I gave up and used avacado oil. The chicken was delicious and used for lunch all week! I will admit I snuck some sour cream and cheese after the first serving.



This dish gets a solid 8 out of 10. Definitely would make again we finished the whole oven.
