Bosnia and Herzegovina

Bosnia Herzegovina is a country in Southeast Europe. It has the last jungle in Europe that is over 2,000 years old, with trees up to 300 years old. Bosnia Herzegovina has had human settlements since the stone age. Bosnia is the larger norther part of the country the word Bosnia meaning water for its many rivers and waterfalls. Herzegovina makes up the southern 20 percent where the capital Sarajevo is. Bosnia Herzegovina's national dish is call Cevapi. Cevapi is basically a rustic meatball made up of a mix of lamb and beef with some garlic pepper, and baking soda. Instead of balls they are rolled into little susage like rolls that sit in the fridge for a day to firm up and marinate the flavors. They are often eaten inside Lepinje. Lepinje is a balkan style pita bread made with flour and sourcream. They are distingushed by their cross cuts on the top. I made both of these along with greek yogurt and green onions.


These sausages are usually grilled on a very hot grill along with the Lepinje. I used a cast-iron instead and grilled these for a few minutes. When they finished you dip the bread in beef broth and place them with the Cevapi for a few minutes.

Half the Lepinje were covered with sesame seeds. I think I did an alright job but should of made the rolls fatter. I rolled them a little to large and the turned out more like a pizza pie meaning it was hard to make a pocket for the meat.

The dish was amazing. The meat was very sweet and the Lepinje soft and chewy. I regretted not making the entire recipe as I halved it. I give this a sold 8 out of ten and will definitely make again. I'm moving this one up to second place. Check in next week for Bolivian Saltenas.
