Welcome to Antigua and Barbuda. I was very excited for this dish as I got to visit this country a few years ago for my sister's wedding. Antigua is a beautiful country with gorgeous beaches and cool old boats/docks.

Fungee comes from Barbuda while Pepperpot comes for Antigua. Fungee is a mushey like food made from cornmeal and okra. Pepperpot is like many other dishes so far made from things found by the locals placed in a large stew. Mainly squash, zucchini, spinach, tomatoes, and pumpkins.

The Fungee was a bit hard to make requiring you to stir the thick glue like concotion for 20 minutes. Pepperpot was alot easier and straight forward but if I was to make it again I would of used chicken instead of beef brisket.

I would give this dish a 5 out of 10. Although if I made it again I think it could if been alot better. Fungee was not Mac's or my cup of tea. It was like a flavorless mush. The pepperpot also did not have a ton of flavor. The cornbeef was tough and the squash was undercooked. I am sure that someone from either of these islands could make a delicious meal but I could not!

Be sure to check in next week for Argentina where Mac will be our guest chef!
