Welcome to Azerbaijan. Azerbaijan is known as the land of fire for its history of Zoroastrianism, it has some of the oldest hearths on the planet. Not only that but the mountain Yanar Dağ is in Azerbaijan. This mountain has been on fire for 65 years thanks to the continuous supply of natural gas in the area. Azerbaijan has an immense amount of oil and gas in its earth.

Now I am ashamed to admit that it was difficult for me to pronounce this country but I spent a lot of time looking at all of the different foods found here. Azerbaijan and Armenia had a lot in common. At this time Armenia and Azerbaijan are in a conflict over a territory known as Nagorno-Karabakh. This conflict has been going on since the Cold War.

The national dish of Azerbaijan is called Plov. However I did not want to make another rice and beef dish so I opted for a brunch meal common there called Qutab. I used a recipe from Yummy Universe on youtube. https://www.youtube.com/watch?v=0LjVYr4OLBI.

Qutab is essentially like a quesadilla that can be filled with any matter of things. I made both from the video one with beef and onion and the other with a heavy green salad and feta. Both were topped with dried cranberries.

This made for a very bright and refreshing meal. I very much enjoyed them but Mackenzie did not. I believe I could of gotten the dough thinner if I had been more patient but it took quite a while to make all of them. I really should of halved the recipe. Overall I give this a 7 out of 10. Mostly because of the time that it took the fry them all up was labor intensive. Think pancakes with 8 extra steps. The meat ones were very tasty but I preferred the vegetable ones.
