Bahamian Baked Grouper (Tilapia)

Welcome to the Bahamas and welcome to the B's. The B's have proven to be a difficult start with the Bahamas, Bahrain, and Bangladesh all having their own challenges. I will start off by apologizing to the Bahamians for this one. The national dish of the Bahamas is Conch. They eat it in a multitude of ways, Conch Salad, Conch Fritters, Cracked Conch, and Conch stew. however the only way I could find conch was if I had it mailed to me by special request. So I decided to make some other dish from the Bahamas.

Other than conch they eat Rock lobsters, Crab, Grouper and every other fish from the Atlantic. I decided on a dish from Allrecipes for Bahamian Baked Grouper, https://www.allrecipes.com/recipe/161609/bahamian-baked-grouper/

Along with the baked Grouper I made some macaroni and cheese. Apparently in the Bahamas Macaroni and cheese is a very popular dish. However finding Grouper proved to be equally as difficult and I settled on Tilapia.

This was a simple dish were the fish was marinated in lime, salt, and pepper. A thinly sliced pepper, onion, and tomato were pre-fried in a pan before being placed over the fish and baked together at 350 for about 11 minutes.

I was expecting the worse but was extremely impressed with the flavor of this dish. Normally my frozen fish turns out dry and crusty or undercooked and stringy. This was perfect, the fish was moist, tender and flaked easily. In addition to the flavor it was the easiest dish I have made yet for this experiment. I actually loved the roasted vegetables on top and will definitely use this recipe for the rest of the Tilapia.


All in all it gets a 7 out of 10, I expect if I used real Grouper it would of been higher. This does not place in the top dishes however.
